Repeat the turn/fold/roll one more time, then cut biscuits with a round cutter (when cutting, flour the cutter, and press straight down before turning–if you turn while pressing, the layers may not puff up well.) Roll out the scraps and keep cutting until you’re out of dough (this should give you 5-6 3" biscuits or as many as a dozen 2" biscuits).
Place on a baking sheet, leaving an inch or so between them, and bake for 15-20 minutes until puffed up and nicely browned.
If I were making buttermilk biscuits (replacing the cream with buttermilk), I usually trade half the butter for shortening and half the baking powder for baking soda with good results. Sometimes I throw in some dry herbs and/or cheese into the dough as well.
